While studying history in his native city of Tours, Franck started working for local contemporary art gallery Michel Rein, following the gallery to Paris in 2000, and then co-founding the city’s game-changing restaurant Le Chateaubriand a few years later. Author of a book on French cocktails of the interwar period, in 2018 he opened bar and café Cravan: a rare exercise in focus, restraint, and quality, orchestrated across a note-perfect menu of cocktails, coffee, and bar food.
