Born in Paris to a Sicilian father and a French mother, Cédric performed a spectacular pirouette from oft-injured Cirque du Soleil acrobat to olive oil entrepreneur – olive oil having been a staple of his visits to Sicily. After three years of preparation on the ground, in 2007 he opened épicerie La Tête dans les Olives, in Paris, to showcase the Sicilian terroir. La Table Unique, a tasting-menu concept, followed in 2009. He’s since branched out to London – and heirloom wheat, which informs his latest project, mill/eatery Mulino Mulè.
